Foundation

The Foundation Course is designed to provide an in-depth overview of major grape varieties and their regions, in addition to a focused introduction to tasting and sensory analysis. The 6-week course also covers key concepts of grape-growing and winemaking. The goal is to expose students to the impact of climate and soil on a grape’s expression in the glass, in a fun and engaging atmosphere.

VITI VINI

Viti Vini is an immersive 24-week course that provides students with a richer, deeper look at the underpinnings of vast universe of wine. “V & V” curriculum is intended to provide an academic delve into significant global wine regions, their history, culture and wine law. We dive into the nuances of terroir and the impact of climate, soil and weather on each region’s varietals. Students will learn powerful blind tasting techniques that are geared at training the senses to for data interpretation and reasoning.

Blind Tasting

American Sommelier’s Blind Tasting course will teach students how to taste like the pros. This class is a power 12-week journey that guides students through the sensory world of wine.  Tasters will learn to analyze what is in the glass based on site, aromatics and flavors while applying theoretical knowledge learned through the foundations of viticulture and vinification.  By the end of this course, students can identify and describe the empirical data before them with a rich vocabulary revealing varietal, country of origin and even age range.

Sales, Service and Buying

In the Sales, Service & Buying Seminar Series we examine the process of selling wine (or any other beverage) to a customer. Beginning with a high level overview of the goals and responsibilities of the sommelier, and then zooming in on the intricacies of the sale. “Sales” touches on adjusting your sales tactic according to the restaurant environment, working with colleagues, personal presentation, troubleshooting tricky situations and the all important conversation with your guest. You also learn all of the logistics of how to manage a bar: Inventory, budgeting, list building, laws and regulations, supplier relations etc. A great guide not just for sommeliers but also for managers and owners.
