
The 24-week Viticulture & Vinification Course (Viti-Vini) is designed to provide students with a comprehensive look at grape-growing, winemaking and the viticultural regions of the world. The course is recommended for wine and hospitality professionals who wish to expand or update their knowledge of the field, as well as anyone looking for an in-depth approach to understanding wine.
In addition to introducing beer, spirits, cigars and blind tasting technique, the course covers topics such as grape varieties, regulation & legislation, climate, geography, soil, industry statistics, specific grape growing & winemaking techniques and food pairing. Graduates receive the American Sommelier Viticulture & Vinification Certificate and Silver Pin.
By 2015 our 24-week Viticulture & Vinification Course will be replaced by the VITI Series: VITI1, VITI2, and VITI3. Each section will cover wine theory and tastings in a graduated progression of complexity.
As a whole, the VITI Series will offer a more profound knowledge and understanding of viticulture & vinification, presenting the material in a sequence of manageable 10-week courses. We have carefully designed the VITI Series curriculum to maximize the student’s potential for comprehension, retention and overall success.
VITI2 is scheduled to be launched late in 2013, with VITI3 following in 2014.

Have a global understanding of how the vineyard environment impacts the resulting wine

Understand and can identify differentiating characteristics of Old World and New World styles
Profound confidence in tasting and analysis procedures
Have a solid theoretical knowledge base of climate, soil, geography, grape varieties, history, laws and V&V practices of all major winegrowing regions of the world
Have a basic knowledge of beer, spirits, sake, and cigars
